  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 cup maitake mushrooms, cleaned and torn into smaller pieces
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 6 cups vegetable broth
  • 1 cup cooked quinoa
  • 1 cup chopped kale or spinach
  • Salt and pepper to taste
  • Fresh parsley, for garnish
