Ingredients

  • 2 cups mixed mushrooms (Lion’s Mane, Oyster, Shiitake, King Trumpet, or whatever’s fresh), cleaned and halved if large
  • 1 red bell pepper, chopped into 1" squares
  • 1 small red onion, chopped into chunks
  • 1 zucchini, thick-sliced and halved
  • Optional: small pieces of corn on the cob, pre-boiled
  • 2 tbsp olive oil
  • 2 tsp Boom Bayou Cajun Mushroom Seasoning (or your preferred spice blend)
  • 1 tsp garlic powder
  • Salt & black pepper, to taste
  • Juice of half a lemon (for finishing)
  • Chopped parsley for garnish (optional)
  • Metal or wooden skewers (if wooden, soak for 30 mins before grilling)

Step 1

Prep the Veggies: Wash and chop all vegetables and mushrooms to similar sizes for even grilling. Pat mushrooms dry to ensure a good sear.

Season: In a large bowl, toss mushrooms and veggies with olive oil, Boom Bayou seasoning, garlic powder, salt, and pepper.

Skewer It Up: Thread veggies and mushrooms onto skewers, alternating colors and textures.

Grill Time: Place skewers on a preheated grill over medium-high heat. Cook for 8–10 minutes, turning occasionally, until mushrooms are golden and veggies are slightly charred.

Finish & Serve: Remove from grill, squeeze fresh lemon juice over the top, and garnish with chopped parsley. Serve hot with dipping sauce or over rice.
