Preparation
Step One: Make the Dough
- Sift flour into a large bowl.
- Slowly cut water into the flour using a dough cutter.
- Mix with your hands until the dough becomes stretchy and pliable—about 5–8 minutes (this helps develop the gluten).
- Form the dough into a ball, cover the bowl with plastic wrap, and let it rest for 30 minutes, or until velvety soft.
Step Two: Make the Filling
- Preheat a sauté pan or wok over medium heat.
- Add sesame oil and heat for 30 seconds.
- Stir in yellow onions and cook until slightly browned.
- Add the remaining filling ingredients, except the green onions and cilantro.
- Stir until mushrooms begin to brown.
- Add green onions and cilantro, cook for 30 seconds, then remove from heat.
- Transfer the filling to a bowl and allow to cool.
Step Three: Make the Dipping Sauce
- In a bowl or blender, combine all ingredients except sesame oil.
- Use an immersion blender (or regular blender) on high to puree garlic and ginger finely.
- While blending on medium speed, slowly drizzle in sesame oil until the mixture thickens.
- Serve at room temperature or heated.
- Optional: To thicken further, heat the sauce with 3 Tbsp cornstarch mixed into ½ cup cold water over medium heat, stirring constantly.
Step Four: Form the Dumplings
- Divide the rested dough into 10 equal pieces.
- Roll each piece into a ball using your palms.
- Lightly flour a baking sheet. Place a dough ball on it and flatten with your palm.
- Lightly flour the top and roll flat with a rolling pin into a thin circle.
- Transfer to lightly floured parchment paper and repeat for all dough balls.
Step Five: Fill and Fold
- Lay out 3 dumpling wrappers at a time, spaced at least 5 inches apart.
- Spoon 1 Tbsp of filling into the center of each.
- Fold each wrapper in half to create a half-moon shape.
- Seal the edge using one of two methods:
- Pleat-folding with your fingers.
- Pressing with a fork along the curved edge.
- Repeat for all dumplings.
Step Six: Steam the Dumplings
- Line a dumpling steamer with parchment or dumpling paper.
- Place dumplings inside, spaced slightly apart.
- Steam for 8–10 minutes, or until firm and translucent.
Serve
- Serve hot with dipping sauce.
