Creamy Mushroom & Root Vegetable Chowder

Ingredients

  • 2 tbsp olive oil or butter
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 cups diced root vegetables (carrots, parsnips, potatoes)
  • 2 cups mixed mushrooms (Lion’s Mane, Oyster, or other seasonal varieties), roughly chopped
  • 4 cups vegetable or chicken broth
  • 1 cup unsweetened cream or coconut milk
  • 1 tsp thyme
  • ½ tsp smoked paprika
  • Salt and pepper, to taste
  • Optional: chopped fresh parsley for garnish

Instructions

Step 1

In a large pot, heat olive oil or butter over medium heat. Add onions and garlic; sauté until translucent.

Step 2

Add root vegetables and cook for 5–7 minutes, stirring occasionally.

Step 3

Stir in the mushrooms, thyme, paprika, salt, and pepper. Cook for 3–5 minutes until mushrooms release their moisture.

Step 4

Pour in broth, bring to a gentle boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.

Step 5

Stir in cream or coconut milk, cook an additional 5 minutes until chowder is heated through and slightly thickened.

Step 6

Taste and adjust seasoning. Serve hot, garnished with fresh parsley.
